INGREDIENTS

What we put into our bodies has long lasting and profound repercussions on our lives. The cells that we feed the food we eat miraculously creates the body we now project onto the canvas of physical reality, but beyond that the food we put into our mouths also affects our psychological, and more importantly our spiritual health. The well known saying is, “our Body is a Temple of the Divine”, yet in our technologically advanced, modern society our health is in a state of crisis. Despite all the easy accessible information at hand we are waylaid AND BOMBARDED by easy weight loss diets and advertisements promising the best and the most natural and organic vitamin or iron or etc. –enriched foods. What we eat has a powerful and profound effect on our entire life. The food that we take in becomes every cell in our body, making up our physical, psychological, and spiritual health.

However our food is sprayed with chemicals, artificially preserved or coloured and genetically modified. Huge corporations are not interested so cheap; unhealthy fast food or supermarket frozen foods continue to be more affordable than healthy foods that can nourish our bodies, mind and spirit. We are a civilization in decline in regards to our health. One can read in any report or research how many people are developing syndromes like IBS, obesity, high cholesterol, diabetes , gluten or lactose allergies and a myriad of other food related diseases.

So, what is happening? Where and how can we make a change? How do get out of this labyrinthine maze.

I felt just awful when eating anything with wheat flour or drinking milk or eating dairy products or processed foods. This had a profound affect on my workouts and this frustrated me. I started to realize that when I started substituting just a few ingredients in my diet I started feeling more alive and in harmony with my mind and the world around me and this enhanced my performance as an athlete .

I am not a professional chef or nutritionist but after years of studying what was healthy for me and please believe me I fully understand that of seven billion people on the planet there will exist seven billion different needs, I want to share my discoveries about food. What I propose here is healthy natural food, unadulterated and wholesome food. I offer my recipes which are healthy.  A mix of traditional plant-based diets, vegetarian, vegan, low-fat, sugar free, gluten free, lac-free, raw  and paleo foods. My focus is on health and at the same time enjoying all the flavours and tastes of pure and clean food.   It’s a celebration of the colors, tastes, smells, and textures they offer and all the pure and clean energy they possess.

It may seem daunting at first to consider cooking this way and I often hear friends complaining that they simply don’t have much time to cook. They also have this idea that cooking a plant-based diet is too time-consuming. The reality is that it’s no different than cooking any other kind of food. I need to say that the most important idea here is to keep an open mind and have balance not only in relation to cooking but our lives. We need to tread the middle path; we need balance and see things as they are and not what we think they are. If our bad habits are causing us damage, get off the merry -go-round and try changing the way you perceive reality or your intuitive body, sooner or later will make you change when you become allergic or develop a serious health condition!

A diet rich in whole grains, vegetables, fruits, nuts, and seeds, fortifies the disease-resisting capacity of our body. When our heart, lungs and our immune system are strong, the flu, headaches, allergies, and even more serious conditions such as heart disease, arthritis, asthma, diabetes and cancer can have no or milder affect on us.

A more important note is that eating this way is more compassionate with the suffering of animals and does less harm to the earth than a meat-eating diet that wastes precious water, land, and resources.

I am not preaching or wanting to change anyone. We need to have common sense and compassion with others and especially with ourselves.  We only have the power to change our perception and ourselves and in this way inspire others.

As an inspiration I must mention Donald Watson, an unlikely but revolutionary human being and thanks to him that veganism today thrives around the world. He was a vegetarian and a conscientious war objector and as a young boy living on a farm witnessed the cruelty to dairy cows and couldn’t reconcile his philosophical pacifism with what he had experienced and stopped drinking milk.

Since ancient times the practice of avoiding animal foods always existed but the word vegan was Watson’s invention coming from the beginning and end of “vegetarian.” In 1944, he created the first vegan society in the UK and in 1948; the first vegan association came into being in the United States. Watson was a vegan for sixty-one years, and vegetarian for more than eighty and lived until ninety-five years of age. He lived a quiet life as a solitary craftsman and an organic farmer.

Religious ascetics and philosophers have been vegetarians and some even tried vegan diets throughout history. Among the ancient Greeks, in the sixth century b.c., Pythagoras, the great mathematician and his followers were vegetarians. Buddhists and the ancient Jains and Hindus in India were already practicing ahimsa, taking a vow not to kill by not consuming animal flesh and eggs. More recent philosophers, and many religious groups, from the Rastafarians to the Eastern Orthodox Church continue to promote the veganism as a way of achieving physical and spiritual purity.

Nearly all major cities of the developed countries and slowly even here in Brazil as in Sao Paulo, have one or more vegan restaurants, and hundreds of businesses are now waking up to the demand of cruelty-free cosmetics, gluten free or lac-free foods with a vegan certification.
