PASSION FRUIT
A refreshing and delicious dessert, full of antioxidants, minerals and fiber.

INGREDIENTS:
2 TEACUPS TAPIOCA PEARLS
2 TEACUPS JUICE * 3 PASSION FRUIT
1/2 TEACUP HONEY OR AGAVE NECTAR (VEGAN)
1 LITRE OF WATER
DIRECTIONS:
1- LEAVE TAPIOCA PEARLS IMMERSED IN WATER FOR 2 HOURS;
2- WASH TAPIOCA PEARLS AND COOK IN 1 LITRE OF WATER FOR 10 TO 20 MIN UNTIL THE PEARLS BECOME TRANSPARENT;
3- ADD ALL INGREDIENTS TO THE PEARLS AND COOK FOR 15 MIN ON A MEDIUM FIRE;
4- PLACE THE PEARLS INTO A LARGE GLASS BOWL AND REFRIGERATE TO SERVE COLD.
HOW TO PREPARE THE JUICE
* PASSION FRUIT JUICE:
PUT THE PULP OF 3 MEDUIM PASSION FRUITS IN BLENDER WITH ½ CUP OF WATER, STRAIN;
KEEP SOME SEEDS TO DECORATE THE PEARLS
OTHER JUICE FLAVOURS:
* BEETROOT JUICE WITH ORANGE AND SPICES:
1 MEDIUM BEETROOT PEELED AND BLENDED WITH A LITTLE WATER;
THE JUICE OF 4 SWEET SQUEEZED ORANGES HEAT THE BEETROOT AND ORANGE JUICE WITH A SMALL STICK OF CINNAMON AND 2 CLOVES FOR A FEW MINS.
* HIBISCUS FLOWER TEA WITH HONEY.
