INGREDIENTS:
CAKE:
4 EGG WHITES (LARGE EGGS) OR 4 TABLESPOON FLAXEGGS* (4 TABSP OF FLAXSEED FLOUR 8 TABSP WATER)
2 TEACUPS BROWN COOKED QUINOA
1/2 TEACUP COCONUT OIL
1 TEACUP COCONUT SUGAR OR 3-4 TABLESPOONS RAW STEVIA
1/2 TEACUP ALMOND MILK OR COCONUT MILK
1 TABLESPOON CAROB POWDER
1/2 TEACUP COCOA POWDER
1/2 TEASPOON BICARBONATE SODIUM
1 TABLESPOON VANILLA EXTRACT
GLAZE:
150G DARK CHOCOLATE 85% CACAO
1 TABLESPOON COCONUT OIL
1- MELT DARK CHOCOLATE IN BAIN MARIE, ADD COCONUT OIL.
DIRECTIONS:
1-PRE HEAT OVEN 180 C, LINE ROUND BAKING PAN WITH GREESED PARCHMENT;
2- IN A FOOD PROCESSOR PULSE THE COOKED QUINOA UNTIL THE SEEDS BECOME A PASTE, SET A SIDE;
3- BEAT EGG WHITES UNTIL STIFF PEAKS;
4- IN A BOWL COMBINE ALL INGREDIENTS AND LASTLY BAKING POWDER AND BICARBONATE TO THE MIX ;
5- BAKE 200-220 C FOR 30 TO 35MIN;
6- LEAVE CAKE TO COOL AND POUR THE CHOCOLATE GLAZE OVER CAKE:
7- REFRIGERATE FOR 45 MIN AND SERVE.
