NO-BAKE VEGAN CHEWY GRANOLA BARS.

INGREDIENTS:

3 CUPS OATS 1 CUP ROSTED AND CHOPPED WALNUTS

1 CUP ROSTED AND CHOPPED ALMONDS 1 CUP ROSTED AND CHOPPED CASHEWS 1/4 CUP FLAXSEEDS

1/4 CUP SUNFLOWER SEEDS

1/4 CUP CHOPPED DRIED PRUNES

1/8 CUP GOJI BERRIES

1/3 CUP CACAO NIBS

1 CUP COCONUT OIL

1 CUP HONEY ( VEGAN : JUST USE ORGANIC SUGAR CANE SYRUP OR DATE SYRUP)

1/2 CUP BROWN SUGAR MASCAVO

100 G DARK 85% CHOCOLATE 1/2 TEASPOON PINK SALT

DIRECTIONS:

1- IN A LARGE GLASS BOWL COMBINE THE OATS, NUTS, DRIED FRUITS, SEEDS AND SALT MIX WELL;

2- IN A SAUCE PAN HEAT THE COCONUT OIL, HONEY OR SYRUP AND MASCAVO SUGAR BRING TO A BOIL MIXING WELL UNTIL SUGAR HAS DISOLVE;

3- COMBINE THE WET MIXTURE TO THE DRY MIXTURE AND MIX WELL UNTIL THE MIXTURE IS ALL HYDRATED;

4- IN A RECTANGULAR BAKING PAN ( 9-13 INCH) LINED WITH PARCHMENT PAPER POUR MIXTURE. PAT IT DOWN REALLY WELL WITH HANDS OR WITH THE BACK OF A SILICONE SPATULA;

5- IN FRIDGE FOR AT LEAST 2 HOURS;

6- DRIZZLE MELTED DARK CHOCOLATE ON TOP AND LET IT SET INSIDE FRIDGE FOR 20 MINS;

7- CUT IN RECTANGULAR PORTIONS;

8- STORE IN SEALED CONTAINER.

SERVES: 20 RECTANGULAR BARS PREP TIME: 15 MIN
